Live bait works great when we can get it, but don't worry if the bait's not cooperating – these fish will absolutely crush cut squid, sardines, and cigar minnows. The key is staying patient and keeping your bait right on the bottom where the grouper live, while also being ready for those surprise King Mackerel that cruise the mid-water column around these structures. These bright red fighters typically run 15 to 25 pounds around our local wrecks, though we see plenty of bigger fish that'll test your arms and your drag system. Snapper are smart – they know exactly where the structure is and they'll try to cut you off on it the second you hook them. The best action happens during their season, typically summer months, when they're schooled up heavy on every piece of bottom structure. What makes catching them so satisfying is the combination of their fight and the fact that they're absolutely delicious on the dinner table.
Red Grouper are the bulldogs of the wreck world, and they fight like it. These fish can push 20 to 40 pounds easily, and they have one game plan when hooked – dive straight back to their hole in the wreck. You've got about three seconds after hookup to turn their head and get them coming up, or you'll be re-rigging. Grouper are year-round residents on our wrecks, but they're most active during cooler months when the water temperature drops and they're feeding heavily. There's nothing quite like the solid thump of a big grouper picking up your bait, followed by that unstoppable initial run toward structure.
King Mackerel patrol the waters around our wrecks, especially during spring and fall migrations. These fish are speed demons that can stretch 30 to 50 inches and provide some of the most exciting fights you'll experience. Kings typically cruise 20 to 40 feet down around the wreck edges, picking off baitfish that get pushed up by the current. When a King hits, you'll know it – they make screaming runs that'll test your reel's drag system. The technique for kings is different from bottom fishing, so we'll adjust our approach when we mark them on the electronics.
Blackfin Tuna might be the most underrated fish we catch on these trips. They're smaller than their Yellowfin cousins, typically running 15 to 25 pounds, but they fight with incredible determination and speed. Blackfins show up around our wrecks when conditions are right – usually when there's clear blue water and plenty of baitfish activity. These tuna are excellent table fare and provide non-stop action when you locate a school. They often travel with the King Mackerel, so when we're seeing one species, we're looking for the other.
Spanish Mackerel round out our target list and they're perfect for keeping the action steady between bigger fish. These smaller members of the mackerel family are abundant around our wrecks, especially during warmer months. They're aggressive biters that hit fast-moving baits and provide excellent light tackle action. Spanish Mackerel are also fantastic for first-time anglers or kids, since they bite readily and fight hard for their size.
